Pantry Raid Week: Strawberry Pineapple Bread


So for breakfast this morning I wanted to do something special for Re other than Lucky Charms, before she makes the trek home to NJ. I miss her already. Horribly. But I won't go there right now. I remember seeing the recipe for this bread on AllRecipes, so I decided to try it this morning as it is highly recommended. The reviews RAVED about it. I don't know why though, it was not THAT great.

Pantry Raid Week: Strawberry Pineapple Bread
1 (10 ounce) package frozen strawberries
1/2 (20 ounce) can crushed pineapple, drained
4 eggs, beaten
1 1/4 cups vegetable oil
2 cups sugar
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
3/4 cup chopped walnuts
3/4 cup chopped macadamia nuts


1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 5x9 inch loaf pans.

2. In a bowl, mix the strawberries, pineapple, eggs, oil, and sugar. In a separate bowl, sift together the flour, baking soda, salt, and cinnamon. Mix the flour mixture into the bowl with the fruit until evenly moist. Fold in walnuts and macadamia nuts. Divide the batter between the prepared loaf pans.

3. Bake 1 hour in the preheated oven, until a toothpick inserted in the center of a loaf comes out clean. Cool on wire racks.

Notes:
-Being pantry raiding week, I was short a few ingredients and had to substitute a little bit. I only had one cup of vegetable oil left, so added 1/4 cup of olive oil.
-I used every last crumb (?) of flour! I thought I would have to dip into the wheat flour, but I was a-ok!
-I didn't have walnuts OR macadamia nuts, so I used pecans. And I only had 1/2 cup. They were still fabulous.
-I had pineapple chunks instead of crushed pineapple, but just did a few pulses in the bullet.
-I read on the reviews that a woman made a glaz out of 3 tablespoons pineapple juice and 1 cup confectioners sugar, so I tried it. Not that great. I like pineapple, but this just tasted weird. I added some vanilla and a little more sugar and it tasted a little better.
-So when I went to make the glaze, I realized I had no 10x sugar... I later saw that in my organizing fit last week I put it where it belongs, with other baking supplies... Anyways, I googled it and saw that if you take regular sugar and put it in the blender it turns into 10x. So into the bullet it went, and it worked!
-I won't be making this again. I sent the 2nd loaf home with Lyn for my mom to try. THe strawberries got mushy and I'm a texture-freak. It was also a litle too-cinnamon-y for my taste.
