Spicy Honey-Lime Grilled Drumsticks
MAKES: 4 SERVINGSHANDS-ON TIME: 20 MIN
TOTAL TIME: 1 HR., 20 MIN
Ingredients:
8 chicken drumsticks (about 2 lbs.)
1 tsp. salt
3/4 pepper, divided
1/4 cup butter
1 medium onion, diced, about 1 cup
1 (12oz.) bottle chili sauce
1/4 cup honey
2 Tbsp. fresh lime juice
Vegetable Cooking Spray
Garnishes: fresh cilantro leaves, lime wedges
Directions:
- Sprinkle chicken with salt and 1/2 tsp. pepper. Let stand, covered, 30 minutes.
- Coat cold cooking grate of grill with cooking spray, and place on grill. Preheat grill to 350-400 (medium high heat.) Grill chicken, covered with grill lid, 5-10 minutes on each side until browned. Reduce grill temperature to 250-300 (low) heat; grill chicken, covered with grill lid, 20-30 minutes.
- Meanwhile, melt butter in a small saucepan over medium heat, add onion, and saute 4-5 minutes or until tender. Stir in 1/4 tsp. pepper, chili sauce, honey, lime juice, and 1/3 cup water; bring to a boil. Reduce heat to low and simmer 5 minutes. Reserve 1 cup barbecue sauce. Store remaining barbecue sauce in refrigerator up to one week.
- Brush chicken with remaining barbecue sauce. Cover with grill lid, and grill 10 more minutes or until done. Serve chicken with 1 cup barbecue sauce. Garnish, if desired.
This recipe is from the Southern Living free 'Our Best Grilling Recipes' booklet from Food Lion. I picked it up on my way out a few weeks ago and have decided to cook my way through it. The Honey-Lime drumsticks were first, and were not a disappointment!
This whole summer/unemployment schedule has thrown me for a loop, so I made dinner at like 9:30 that night, so the drumsticks were baked in the oven rather than the grill. They turned out delicious, and I highly recommend putting them into your summer grilling rotation!
Please forgive the iPhonetography, I've gotten lazy with my food photography skills! It's just easier to photograph quickly with my phone before scarfing down this glorious dinner than to go upstairs and get my dslr.
